I met Susan Bassett of Mauna Kea Cacao while judging raw cacao at the Big Island Chocolate Festival. Her beans were some of the highest scoring at the event, so I made a point to visit the farm while I was there.
Seeing how the cacao is grown, fermented, and dried on the Big Island made it an easy decision to bring some back and make a single batch. That first run turned out to be something special.
This 70% dark chocolate is made from that same single estate cacao, grown in Hawaii and crafted into a bar that’s clean, cocoa-forward, and quietly bright.
It went on to earn a 2018 Good Food Award, but more than that, it started an ongoing relationship we’re proud to keep building.
